Food: Asparagus Benedict

I have an obsession with eggs, and toast as you may have gathered, always one to load as much as I can onto any type of Carb, well with asparagus coming into peak season, I couldn't resist trying this combo.

Hollandaise sauce, I have messed this recipe up a couple of times, I then tried this Jamie Oliver Recipe and would recommend trying this easy step-by-step approach. I half the butter amount, and use low- fat butter to reduce fat. This would then serve 3 portions, at 4 Smart Points

 If you don't fancy making it from scratch, you could always use a packet recipe, or fresh to simplify the recipe adjusting Smart Points accordingly.

Asparagus Benedict

Ingredients: Serves 2.

Fresh bread of your choice
6 spears of asparagus
2 eggs
Jamie Oliver Recipe/ Ready made Hollandaise
Sea Salt & Cracked Black Pepper
Lemon Juice

Method:

1) Poach 2 eggs, step-by-step method here 

2) Make Hollandaise sauce.

2) Grill Asparagus in a griddle pan, or frying pan for around 4 minutes turning regularly.

3) Lightly toast bread.

4)  Turn off heat, season with salt and pepper, and squeeze half a lemon over the asparagus.

5) Transfer toast to plate, add asparagus on top, and then the egg. Spoon Hollandaise sauce over and serve.

You could add crispy bacon, smoked salmon, or grilled mushrooms.

This recipe comes in at 6 Smart Points, and is perfect at the weekend, especially a Sunday morning.
