For Lent I give up carbs! Yes very, very harsh I know.
But then I heard on the radio that you can have whatever you give up for Lent, on a Sunday.
Doing some research and you won't believe it, it is totally true!
31 years of age and I never knew this. I feel like I have been robbed.
Anyways I made these on a no-carb day, and wowzers I didn't miss the big soft bun in anyway.
Okay maybe a little, but not as half much as I thought.
Low Carb Mexican Turkey Burgers
Ingredients:
250g lean turkey mince
2 tablespoons of smoked paprika
Bunch of Coriander
1 teaspoon chilli powder
1 egg
2 tablespoons of flour
Salt & pepper
1 red pepper
1 red onion
8 cherry tomatoes
Half a tin of sweetcorn
1 large Kos Lettuce
50g cheddar cheese
1 Lime
2 tablespoons of Balsamic glaze
Method:
1) To a large bowl add the turkey mince, and shred with a knife and fork.
2) Add to the turkey mince smoked paprika, chilli powder, egg, half a bunch of chopped coriander, salt and pepper, half the juice of a lime and sprinkle the flour over.
3) Stir together until all ingredients are well combined, and now it's time to get messy.
4) Mould the burgers into round shapes. You want them to be around 2.5cm thick and 9cm across.
Do not make them any thicker as they will not cook all the way through.
(If the mixture is a little wet, just add 2 more tablespoons of flour.)
5) Add a tablespoon of oil to a frying pan and cook 2 burgers at a time on a medium heat, for around 10 minutes, turning over carefully every three minutes.
Repeat this process (This recipe makes approx 4 burgers.)
6) Slice the red pepper and red onion, and add to a different frying pan with a teaspoon of olive oil and cook on a low heat for 6 minutes.
7) Peel 4 Kos lettuce leaves from the bunch, and place them on a chopping board.
8) Spoon a tablespoon of the cooked red peppers, and red onion into the middle of each lettuce leaf.
9) Sprinkle a tablespoon of sweetcorn, and a small handful of sliced cherry tomatoes in.
10) Fold the lettuce leaf over, hold in your hand as pictured. Then place the burger in.
11) Sprinkle some cheese, coriander and a squirt of balsamic glaze over, and tuck in.
You can add mayonnaise or sour cream instead of balsamic, but I adore the sweet and sharp taste it gives, it works really well with the spicy and smoky flavour of the burger.
