Food || Low carb breakfast, made for champions!



This weekend I tried to have a go at making something different for breakfast. This dish is quick, easy and tasty but most of all very filling. Looks are deceiving and I can assure you, carbs won`t be missed.

Eggy Avocado.

Cut a avocado in half and take stone out and peal skin off. Crack an egg into each hole in the avocado. Sprinkle some smoked paprika and salt and pepper over. Grill for around 8-10 minutes. The last minute take them out and sprinkle parmesan over and pop back in for a minute. When you have plated them up, sprinkle some more smoked paprika over and some freshly chopped parsley, and they are done. I was a bit gutted I had no tomatoes in as a couple would have worked perfectly with this dish. But hey ho, there is always next time.

Summer fruit smoothie

I chucked two handfuls of mixed frozen fruits that include raspberries, blackberries and blueberries to a smoothie blender cup. Added 3/4 of the way to top some hazelnut soya milk and 3 tablespoon of organic vanilla yogurt and blended. I topped with some of the whole fruits, and was so looking forward to gulping it all down. Unfortunately, my baba got there first and drank the lot.
