Food: Bubble & Squeak

I don't know about you, but I have lots of vegetables and bits and bobs from the Christmas food shop edging towards its expiration date.

There is an easy way to make all these not so spectacular ingredients, into something pretty tasty.

Good old bubble and squeak!

2 chopped leeks
2 red onions chopped
2 carrots chopped
2 peeled garlic cloves
Half a cup of flour
Leftover stuffing balls
1 tablespoon of garam masala
Salt & pepper
2 eggs
Tablespoon of Olive oil


1) Boil the carrots, leeks, onions and garlic in a pan on a high heat for 10 minutes. (If your vegetables are already cooked, mash what ever you have all together).

2) Drain the water from the vegetables, transfer back to a pan and mash all together with the pre cooked stuffing balls.

3) Add the garam masala, flour, salt and pepper and one egg and mix together.

4) To a frying pan add a tablespoon of olive oil and heat on a medium heat.

5) Scoop a large spoon of the mixture and place in the pan.

6) Using 2 spoons shape the patty into a round shape, and fry for 3 minutes. Then flip and fry on the other side for another 3 minutes.

7) Repeat this process till all the mixture has gone.

These are really tasty, and the garam masala adds a deep and warming flavour to the patties. They can be served alone, with a fried egg, or as part of an English breakfast. The choice is yours.

You can use any vegetables, or meats like: bacon or ham.

The recipe can be adapted with pretty much anything being chucked in.

It is a great way to prevent food waste, and save your pennies.

  1. That is one perfect egg, I really don't know how you manage to make everything look incredible. I never normally like bubble and squeak but I soooo would eat this xx
