Almond & Lemon Valentine Biscuits

Who doesn't like biscuits, especially ones that are shaped like hearts?

With Valentines Day only 6 days away, I decided to make some biscuits with my little rascal at the weekend. They was easy peasy to make, and it was so much fun decorating them - and eating them of course. 

I have popped the recipe below, I think they make such a thoughtful gift for the one you love, or a great treat for yourself with a cuppa.

Almond & Lemon Biscuits.

Makes 12-14 Biscuits

250g Sugar
175g unsalted butter
1 egg
1 teaspoon Vanilla Extract
300g plain white flower
75g ground almonds
Juice of one lemon, and the rind


Hundreds & Thousands


1) Cream the sugar and butter together with a wooden spoon till smooth.

2) Sieve the flour in and stir. Grate the peel of the lemon until the white is exposed.

3) Add the egg, almonds, lemon juice and rind, and mix

4) Dust flour on a chopping board/ worktop. And knead the dough so it forms into one lump.

5) Dust some more flour over, and roll out with a rolling pin so it is around 2.5cm thick.

6) To a flat oven tray, add some baking paper and spritz with a little cooking spray or melted butter. (So biscuits don't stick).

7) With a heart shaped cutter, press into the dough and with a spatula move the hearts to the oven tray. To half the batch of hearts, I pressed lollipop sticks (soaked in water so won't burn) at the bottom of each heart, so they could ate like a lollipop.

8) This mixture made around 12-14 medium heard shaped biscuits.

9) Cook on 160°C (Gas Mark 5), for 25 minutes.

10) Let the biscuits cool for 20 minutes on a wire rack, and then decorate.

You can decorate however you please, I picked up the icing pens and rainbow sugar confetti from eBay.

You don't have to be an excellent baker, or a cake decorator in anyway. 
(As you can tell by my work of art, or heart - haha).
